The flowering of the coffee indicates the birth of possible new fruits. After flowering, the development of the fruits will start. When the coffee is in its mature state, called cherry fruit, it needs to be harvested. If this does not happen the coffee will go into a raisin state, in this state, the coffee starts to lose its quality.<\/p>\n<p>There are three different methods that are used to do this, and they are strip picking, machine picking, and hand picking.<\/p>\n<p>After harvesting, the coffee fruit goes through the post-harvest process, that can be:<\/p>\n<ul>\n<li>Natural or Dry Process<\/li>\n<li>Washed Process<\/li>\n<li>Semi-washed Process<\/li>\n<li>Honey Process<\/li>\n<\/ul>\n<p>After the process the coffee needs to be dried and when the desired humidity is reached, which is between 11% and 12%, the coffee beans leave the processing area and are sorted into different grades. The dry beans are called parchment coffee.<\/p>\n<p>Before being taken to the market, the dried coffee beans are processed as follows:<\/p>\n<p>Hulling: Hulling parchment coffee involves removing the dried husk; exocarp, mesocarp and endocarp.<\/p>\n<p>&nbsp;<\/p>\n<p>Polishing: Coffee polishing is an optional step that is skipped by some millers. It involves getting rid of any sliver skin that may have found its way through hulling. Polished beans are considered to be of a higher quality than unpolished ones. However, in terms of content, there is little difference.<\/p>\n<p>Grading: The beans are then sorted and graded based on size and weight.
